    Bit of a debate on this at the moment in the beer trade. You can refuse service to anybody for any reason except if it's to do with a protected characteristic, and disabilities fall under that (so if somebody felt and could demonstrate that you were refusing service because of their race, or gender, or disability then they have grounds to complain). I'm still personally looking into the rules, but my staff have been instructed to remind customers that they should wear a face mask, but not push it if they claim that they don't have to. As I currently understand it even demanding evidence that they are medically exempt could potentially land you in hot water if somebody wanted to pursue it.

    Correct. Itll land the person demanding the infornation in hot water to the extent theyd be liable if push came to shove.

    Critically, with regards to covid laws you are not to challenge someone who isnt wearing a mask. If tjey say exempt then they are... exempt.
