    you've basically posted 2 pictures of parsley sauce! one has more parsley in than the other!

    For the parsley liquor
    50g/2oz butter
    50g/2oz cornflour
    500ml/18fl oz chicken stock
    generous bunch parsley, leaves only, chopped
    1-2 garlic cloves, roasted and puréed, to taste

    I've never had it so I can't speak first hand, but I think the liquid comes straight from the pot they stew the eels in.

    I feel slightly reassured by that.

    One of my mates used to live in Elephant & Castle & there was a famous pie / eels shop next door. Queue on a Saturday was round the block.

    I think (though less sure about this) that some like to smother it in vinegar too. There were several of those shops around, one was in Walworth, but thats gone now and the other is/was in Peckham which last time i drove that way (well over a year ago), it was still there.

    Though not a fan, I hope it can hang around a bit longer, just because its so different and has some heritage to it. They can keep their eels and liquor to themselves though!

    I like it. The name ‘liquor’ is a bit off putting but it’s just a thinner, stronger, greener parsley sauce. The old pie and mash shops have long gone. Used to go to one in Old Street, done out like a chippy with white tiles and Formica tables. The women serving were like scary old dinner ladies. Menu was one pie, one scoop of mash /two pies, two scoops / or three pies three scoops. And liquor of course. Small pies so you could easily do three. Well I could.

    Never even heard of the stuff before this thread. I will deffo keep an eye out for it and give it a try now if we ever get to have a day out in London again. Once again the BBS proving to be on a par with the Britannica Encyclopedia for next to useless information you never knew you didn't know. Lol

    Definitely worth a go if you can find an old pie n mash shop. And after you’ve had it you'll find you can speak in fluent cockney. “Cor blimey gov’ner off up the old apples n pears mi owd **** sparrer.” Or summat like that.
