why do different schools teach different subjects?

Well I assume they still do anyway . when I was at school we did different subjects to other local schools. Obviously the core maths/science/English etc were the same but other subjects just weren't available to us but were to other schools and vice versa.

Any idea why? I've never got my head round how education can be such a lottery

Going back to last year, the curriculum was mandatory but offered some choice. In History for example, you had to study an Ancient Civilization but you could pick which one so different schools chose different things. In DT you had to learn certain skills but you could make whatever you want which involves the use of those skills.

This year a new curriculum has come into effect which gives even more choice to schools. It also gives choice on how schools assess rather than a common way across the country.

Also, there has been a recent introduction of academys and free schools. These are exempt from the curriculum entirely and can teach whatever they like, and therefore also not teach whatever they like. They can also have non-qualified teachers doing the teaching. Why the Government thinks this is a good idea is beyond me.

I have no knowledge of how the curriculum works in faith schools.

It is a legal requirement to teach RE to under 16s in maintained schools (and sixth forms if schools have them). Parents are allowed to withdraw their child however, and if you are over 18 you can withdraw yourself.
