You should be able to blag stainless steel kitchen and tiling to bathroom wi shower over bath etc with platinum package unless you want integrated appliances. Anything outside of that, save your wedge and get someone in once you complete.
I live in one and apart from a few minor snagging issues initially after moving in we've never had a problem.
You maybe surprised to know but a lot are being turned into HMO's especially closer to the town centre.
Ten years doesn't sound like a lot for a house to me. Seems like you could get away with extremely poor build quality if you're off the hook as long as it lasts a decade.
went to look at show home at hartcliff meadows, no one there. then went back and she tried flogging us one that had fallen through, because they hadn't fitted a door to utility room. then she tried talking us out of waiting for the next phase. then we went back once next phase had been released. finally decided to sign up, were kept waiting about half an hour, giving it 'we're just so busy, everything's selling straight away'...then a couple came in and started kicking off about their house. so we swiftly left. ended up going with an established 30yr old house and couldn't be happier.
Bought one two years ago, I've heard horror stories from elsewhere but I've been impressed with my Persimmon house; after sales have been good as well.

Me and the Mrs bought a Persimmon 3 Bed Semi Detached in December 2014 in Royston and we’ve had issues and initially the after sales was good but then after a few months they couldn’t care less. Luckily the father in law and Mrs’ uncle are builders so have sorted any issues.
We've been upgraded to the platinum package, however, our complaint has been that we paid the reservation fee, completed all the paperwork and they then told us there is no door in the utility room (a Building Control requirement due to the proximity to the adjacent property). The sales girl then lied to her line boss telling her that we had been made aware of this from the outset. We subsequently argued the toss with them and they finally agreed to box out the boiler and provide an outside tap as an extra incentive. Following this we've had further issues such as lack of communication and taking 8 weeks to answer some very basic enquiries including providing a quotation for additional tiling (some of the enquiries were not fully answered with information sketchy and vague at best). We weren't willing to exchange contracts when so many questions remained unanswered, however their legal representatives have now backed us into a corner setting a deadline of this Friday to exchange contracts (or the reservation will be cancelled) even though Persimmon have booked in the mortgage valuation for the day before leaving us no time to sort everything!
The Harcliff Meadows site is leasehold, I'm not sure about the other sites in the area but would assume they are all 'sold' on the same basis. There is an option to buy out the freehold after 2 years. TBH we could get more for our money from buying an existing property so just debating what to do!
