When you say "that cider" what do you mean?
    What exactly are you making?

    Ok.
If you have 5 gallons of Apple juice then I take it you have added a sachet of yeast and sugar.
What type of yeast did you put in and how much sugar?
Did you use the Apple juice 'from concentrate' and not the stuff with added sugar and water?

You should leave it in your 5 gallon bucket until fermentation is finished. Don't put it in demijohns yet.
I assume you have an airlock on the bucket lid.
You will have to leave it until the frothing has finished which can take a couple of weeks or more.
In this heat it should bubble quite rapidly. Anything over 20 degrees will make it ferment quickly.
Once fermentation is finished, when no more bubbles are coming out of the airlock the liquid will start to clear, it will look darker and sediment will gather at the bottom.
It is best if you leave it as long as possible, several weeks is best, so you can be absolutely sure fermentation has finished. I leave mine at least 4 weeks. If you decant it too soon it may not have finished fermenting and if you bottle it the bottles may explode. Be patient !!!
I don't see the need to put it in demijohns. Once it has finished fermenting you should be able to bottle it.
Ask me in a few weeks and I'll tell you what to do next.
YOU MUST LET IT FINISH FERMENTING IN THE BREW BUCKET !!!!!

    No, seems ok.
I've never added citric acid so I don't know what that will do. Also I use cider yeast so what will happen with beer yeast I don't know.
See my other post for more detail.
I hope it keeps fermenting, leave it alone for several weeks to be certain it does what it should.
You'll see when it stops fermenting, then let me know.
Sorry you'll have to wait that long.
Don't put it in demijohns, there's no need to.

    Also add the remaining yeast.
One sachet is good for one gallon or five.
You've done 10 litres, use the whole sachet.

just to makesure of the % you could always throw a 1.5 ltr bottle of cheap 5h1t own brand tesco vodka in it, just to be on the safe side. i used to brew my own until i went blind but the hospital put that down to masturbation .

Used to drink 3 bottles of homebrew cider on a Sunday afternoon after gardening, empty stomach and all that, it would lay me low, very low, for hours, talking absolute drivel with the world spinning furiously around me.
The coordination of mouth, brain and speech is less than nil.
It's mainly that spinning, spinning, spinning that's the killer.

Yes, it was always a case of "never again", but you do it again. You just do.
    I still do.
