Has to be garlic. Underpins loads of awesome dishes including most curry and pasta sauces. i think the world would be a much sadder place without garlic and it’s pretty difficult to replace whereas you can improvise to replace most other vegetables m’lord I submit the case for the humble garlic as the greatest vegetable.

I'm a little surprised nobody has mentioned leeks yet. Delicious cooked down til they are sticky and sweet.
If we're talking veg/soup, I make a wicked sweet potato and roast pepper, bit of chilli in it too. Tis delightful.
Among my superb culinary skills (beans on toast) I make a to die for, Chinese style chicken and mushroom soup. R lass Is not bothered. More for me lol.
