Half it down it's length, spoon down it to dig out all the seeds and wet nonsense, then slice it into 1cm pieces.
Chopped into smallish pieces ,same with tomatoes, Iceburg lettuce and and an onion , mix in a bowl add some olive oil and dressing of choice sprinkle some shredded cheese on and enjoy .
Could also add chopped radish if there’s room looks very colourful and full of goodness nice with some flatbread or such .
I’m 47. I only found out 3 weeks ago a gherkin was a small pickled cucumber. This maybe deserves a thread of its own.
