Try and find some form of world cuisine which is underexposed in Britain. If you try and do something widely established you will be competing with restaurants with a lot more experience and without all the start up costs. A good recent example is Mexican food and Burrito bars. One started in Manchester which does healthy burritos as an alternative fast food option and does them well. It expanded to Leeds and from what I gather is about to go national. It is good, however it benefitted massively form being the first of its type and unique.
Sounds like Chipotle http://www.chipotle.com/en-US/Default.aspx?type=default There all over America with 1400 or so locations. Theyve opened a few in london now as well. Thought it would be the next big thing here.
ChefTyke chose his name phonetically after discovering his chosen name SheffTyke had already been taken. He isn't and as far as I know never has been a chef. Have you tried BFC Dave? Very good at cooking books I'm told. (ducks for cover!)
In the Black Country it seems like every street has three or four hot pork sandwich shops. Sliced white, bit of roast pork, crackling, stuffing, £1.65 (or thereabouts). Can't fail, and you'd only need a kiosk and a set of knives. Never seen one anywhere else though - do you have them up in Yorkshire? Not sure if it counts as World Cuisine though!
There are a few around Hillsborough called Beres. Ironically, they don't like being called Pigs around there.
