    Now that the dust has settled after the Christmas period, bit by bit the boxes of sweets, crackers and biscuits are disappearing from the kitchen. Lo and behold, lurking behind the box of McVities crackers on the shelf was a left over slab of Lottie Shaw's parkin that I had forgotten about. Ruddy delicious it is too, definitely the nicest parkin i've ever tasted. And what's best about it is that nobody else in our house likes it, so it's all mine!

    Parkin doesn't ever go "out of date". In fact if made properly and kept in an airtight container, it gets better with age ....

    I sound like my Mum now .

    What he said. It did actually have a date of February on it, but it had become a little stickier on top and was all the better for it.

    Went down quicker and didn't leave such a bad taste in the mouth.

    I've just read that again and realise this could be taken the wrong way! For anyone joining the thread at this point we are talking about parkin the cake, and we aren't trying to out another footballer!
