I think they are shocked because the audition you see on TV is their second in reality, they've already been put through the first round which is done in front of different judges.

its because

they have people vetting the talent - everyone auditions in front of judges before they get to cowell and co. so people have raised expectations when they get to audition in front of the tv judges. thats what happened at my audition anyway
