Made a carrot cake at the weekend under a bit of duress (the missus loves carrot cake, I'm not that fond) but I must admit, I did a pretty good job. Really quite light in the centre and the thing that made it... a lime and mascarpone topping.
Apple, blackberry, rhubarb etc any combination in a crumble with custard is the best pudding in the world bar none. I replace some of the flour with muesli, it's wonderful.
