    Made a carrot cake at the weekend under a bit of duress (the missus loves carrot cake, I'm not that fond) but I must admit, I did a pretty good job. Really quite light in the centre and the thing that made it... a lime and mascarpone topping.

    I think it’s sweet and sticky and thinner texture than treacle.

    Probably my favourite pudding though I do prefer it cold with custard that's not too hot .

    Apple, blackberry, rhubarb etc any combination in a crumble with custard is the best pudding in the world bar none. I replace some of the flour with muesli, it's wonderful.
