    Bloody GPs. If they don't know they just make something up. Ask himif he knows the difference between low-density lipoproteins and high-density lipoproteins and then ask him to guess which one that olive oil stuff the Italians smother everything in contains. </p>

    You could run a marathon every day and be as thin as a rake but if you're shovelling saturated fats you're asking for high cholesterol and heart disease.</p>

    The people of the South-western area of France, especially the 'Lot' departemente have terrible diets as far as cholesterol goes, sausages, pork and masses of duck and goose all cooked in goose fat.

    In theory they should have very high cholesterol levels, but they don't, quite the opposite in fact. They have some of the lowest incidences of heart disease in Europe too.

    No one knows why for sure, but I bet exercise (it's a hilly rural area) plays a large part.

    There is considerable and increasing evidence

    that the significance of cholesterol in health has been over stated.
    And excersise has always been known to be more important than diet in effecting health.
    which is the point i was making.
    The health risks in sausages and bacon have mostly been related to saltpetre. which is there to keep them pink.
    And absent from my home made ones.

    There is a research team here

    that works on altering the fat profile of meat to make them 'healthier'.

    The funding has been pulled because the concept is now known to be wrong.
    Not my area mate.
    But I know government aint funding it any more

    I always told them

    forget fiddling with the meat.
    Just eat less of it and have more veg.

    But then our Prof of nutrition is 25 stone!
