There is a significant risk of disruption to goods entering and leaving the UK. This would in the short-term affect the availability of goods - and foods/medicines with short shelf-lives are among those most likely to be affected. If queues start to build up, then it will be harder to find companies on the continent willing to deliver to the UK - why have lorries and drivers stuck in queues when they can be delivering goods elsewhere. There is also a limit to how many permits are available to UK haulage firms from the EU, somewhere around 1/10 of the number of drivers/lorries that use them now.
