Aye forgot about beans as a substitute. I make all the mexican style meals (tacos, burritos etc) without mince or chicken, just pack it out with beans, rice and mushrooms.
As others have said above, use a meat substitute to get the protein. My missus is vegetarian and I'm not but I eat veggie 2-3 times a week - I can only get by using the mince/chicken pieces for texture otherwise everything seems like a salad or a casserole.
I've been going to fat fighters for the past six months (Slimming World variety). I've lost just over 2.5 stone so far, and recently, I've been getting the Slimming World kitchen meals. They are a bit like Hello Fresh but follow the SW plan. Anyway, each week, you get a choice of recipes, and I've mostly been getting the ones with meat, but I also want to cut down on animal products, and so I am also trying to eat at eat more veggie/vegan meals. Anyway, all the ones I've made so far from SW Kitchen have been properly tasty and also fairly good from the nutritional point of view. Here are a few of the ones I can see on the website currently. Each week you get all the recipes when you get a box so you can make them at any time without having to purchase the full recipe. Here are the veggie ones I can see for the next week on the website. I've got a few weeks worth of recipe books at home I can scan if you want any more.
A Sunday dinner with all the bag o mashings, (Hate cauliflower n sprouts)yorkshire pudding loads o gravy, bar the meat. Followed by a big serving of sticky toffee pudding n custard.
You know.... I really don't know if I could do that. It feels like heresy to me, but then I've always loved a good roast. Frightening to think we've not eaten out for about 4 and a half years now.
Not vegetarian but have cut down a lot on meat based meals. Some of the non-meat dishes which I can come back to are:- Aubergine Parmigiana Spaghetti alla Melanzane Stuffed Peppers with Rice or Quinoa Spanish Omelette Throw some veg in a pan with eggs and seasoning Omelette Sweet Potato Frittata Summer Vegetable Frittata Throw some veg in a pan with Cheese, Tomatoes and seasoning Frittata Usually eat the above with fresh bread (home baked when possible) and olive oil. Recipes for the above are somewhere out there .......
I lived with a vegetarian for over 10 years, so got used to cooking without meat. I also keep dairy down, gluten & anything with a high sugar content, other than beer, which I like too much, I guess. I do eat a lot of eggs though. As I love curries, there are so many options. I do eat chicken & some fish, depending on it's heritage. I'm more interested in animal welfare, sustainability & eating well, but enjoying what I eat. I've ditched most of the processed vegetarian / vegan ready meal type stuff, like Linda McCartney, as I'm not convinced that is any good for you. Most is highly processed & comes from mushrooms & onions. You can make a great mince from finely chopped mushrooms & onions that tastes a lot better in a curry, or bolognaise & will cost a lot less too.
It happened by chance I just didnt fancy meat on a carvery once so thought bugger it, I'll try without liking the idea much tbh. So loaded up with veg. taties roast and mashed. I think the lashings of Gravy and another big Yorkshire pud helped.lol. Thoroughly enjoyed it tbh. Not summat I'd do all the time but on rare occasions.
Halloumi is a great substitute for bacon in certain things as it has a similar flavour profile. I used to love bacon and avocado on toast for breakfast. Switched to halloumi a while back and would say I probably prefer it. Not sure how well it would go with a fry-up though! My main problem with veggie dishes isn't them feeling incomplete - they just don't tend to keep me full for very long, even if they're substantial. I generally prefer pizza and Indian food if they're meat-free, but I still feel hungry a couple of hours later. Probably the only exception is a cheese omelette, but that's hardly the healthiest choice.
Our lass once said did you like them sausage. I said yes lovely which butchers. Supermarket Quorn. I honestly didn't realise. When the youngest lad turned veggie 20 + yrs ago. (Back on meat now) we bought a lot of that linda McCartney stuff. All soya this and that. I tried a few. Bloody awful everything tasted of weetabix. And I don't like weetabix
